Lincoln Nebraska Special Event Cakes | S’more Cake | Oktoberfest Cake

S’more Cake, a Lincoln Nebraska Special Event Cakes Bakery, has created this delightful cake that is perfect for any fall occasion, whether it’s a birthday, football game, family reunion, wedding or anniversary. This two tiered cake displays the harvest of fruits that are made from delicious homemade marzipan and accented with colorful food powder. The two tiered cake is covered with an orange blossom flavored edible fondant and is a delicious pumpkin spice cake, which happens to be the favorite of our grandson, Octavius. The filling is a burnt orange buttercream. Yum!

I enjoyed the challenge of creating these fall fruits to resemble the originals as close as possible. The inspiration for this cake came from a book by Sylvia Weinstock, Sweet Celebrations, The Art of Decorating Beautiful Cakes. She is a great cake decorator from New York who has sent her designed cakes all over the world. Her story is wonderful to read and the pictures so much fun to look at. What an inspiration!

The fall season is here and I look forward to the seasonal dinners with our family. We have added a new grandson, Sawyer, to our number this year, so it’ll be great to have another baby in the house for Christmas. Our family is scattered all over the states and we always cherish our precious times together. One of those times is our annual pumpkin patch gathering when the grand children pick out their favorite pumpkin from our pumpkin garden. I can smell the cinnamon rolls and chili now!

Lincoln Nebraska Bakery / S’more Cake / Sadie’s Birthday Cake

S’more Cake, a Lincoln Nebraska Bakery, created a pretty cake for a very special little girl on her fourth birthday. This fun cake was made for Sadie and her friends at her day care and requested by her mother to display her favorite characters. Characters from Frozen were designed from fondant and placed on the top of the cake. On the side of this 10 inch cake were five of the My Little Pony’s, cut out from colorful fondant.

This special birthday cake was made with two layers of my favorite light, white cake recipe. The filling was made with cream cheese, white chocolate, and orange blossom flavored swiss meringue. The cake was then frosted with the orange blossom swiss meringue and decorated with rainbow colored fondant. The Frozen characters, Elsa, Anna, and Olaf, were created with flavored fondant on popsicle sticks to hold their shape. The girls are dressed in their outfits with matching wraps and long braids. Olaf was balancing on one foot in the “snow” made from white fondant and coconut. Elsa and Anna were placed behind Olaf, to watch his antics in the “snow”. A rainbow was placed on the side of the cake and featured five of the main characters of My Little Pony’s, prancing around the outside of the cake.

I really enjoyed the creation of this cake and was very happy to know that it would be enjoyed by Sadie and her little friends that morning. Happy Birthday Sadie!

Lincoln Nebraska Special Event Cake/ S’more Cake/ Zach’s Beer Mug Cake

My son Zach requested S’more Cake, a Lincoln Nebraska Special Event Cake Bakery, to design a beer mug cake for his birthday August 1. He had enjoyed the St. Patrick’s Hat Cake that I posted on my March blog, so this was what he wanted. The cake was made with three layers of delicious red wine chocolate cake and two layers of large chewy chocolate chip cookies. The frosting was a rich cream cheese buttercream flavored with vanilla. This fun cake was filled with chocolate fudge and cream cheese buttercream. The design was completed with lemon flavored fondant, tinted with yellow gel to look like beer in the mug as well as beer pouring from the beer can. The beer can was an authentic empty beer can and held up with a dowel that was inserted into the cake at an angle. Gum paste fondant was then layered up from the cake to cover the dowel. Granulated sugar was pressed into the beer mug to resemble a frosted mug. Homemade vanilla bean ice cream and salted caramel chocolate sauce topped this delicious birthday dessert perfectly.

Picnic dinner of BBQ ribs, roasted corn on the cob and cole slaw was served to family and friends. The evening was perfect , lamps were lit and we were able to enjoy a beautiful evening on the deck. Then, the birthday boy received his special cake, gifts and cards.

It’s always a joy when I see faces all lit up when they look at a great cake!

S’more Cake Bakery creates the perfect wedding cake for Montana wedding.

S’more Cake,  a Lincoln Nebraska Wedding Cake Bakery , has created the perfect, uniquely designed wedding cake for Jesse and Jessica Werner. The wedding and wedding reception was held this last weekend at the Panorama Room in the Great Falls International Airport at Great Falls, Montana. After her taste testing, Jessica and Jesse chose a fondant cake with three tiers on a display with fifty cupcakes and wanted the design to reflect the western theme of her home state of Montana.

This wedding cake had a top and second tier of red velvet, frosted with cream cheese/white chocolate buttercream. The third tier was made in chocolate coconut cake, coconut/white chocolate buttercream. The fondant was flavored with coconut and tinted  beige color. Each tier was decorated with a of background ivory lace piped on with royal icing. The sugar paste flowers were designed into old fashion roses and S’more Cake’s signature modern rose in colors of ivory, shades of dusty rose, and burgundy.

The cupcakes were made in various flavors of rich chocolate, with a few white flavored cupcakes added. The frosting was piped with a cream cheese tinted in the ivory color of the lace work on the cake. Drop sugar paste flowers were scattered on the tops and on the shelves of the cupcakes.

Mother’s Day Chocolate Coconut Cake

“Thoughts from a Mother” came after I spent a wonderful day with three young mothers at my home. Shannon with her daughter Simone, Athena with two of her children and step son, and Alexa, who is “heavy with child” with a  baby boy Metcalf due in July, and her daughter, Charlie; all of us chasing, scolding, laughing, feeding, hugging, making bird cookies, with the usual lively chaos and sharing stories. The following is my story.

“As the elder (gasp) mother, I’m at my usual position at the stove as my mom “in spirit” supervises her Luxembourg crepes; the waffle iron is going, strawberries, blueberries, whipped cream, chocolate sauce and a coconut chocolate cake with coconut ice cream are all in place. Then it rains…. and we scramble to move our party into the house. Growing up on a farm in Nebraska, I take any weather changes in stride.

Then, Charlie, who is two years old, wants to play in the rain, “Grandma, can I go outside for three minutes?” I look at her mom and get the “okay” nod. I told her to wait while I get my camera. I told my daughter, I have never seen a child so excited about being in the rain. She told me that she and her sister Candra used to love doing this. I, however, don’t remember this. I must have been busy surviving at the time. But through my daughter’s memories of her play, enacted by her daughter, I’m learning about those events and experiencing what I missed when she was young.

The house is quiet now and I reflect on my day. I feel the usual gloom that I experience when my children leave the house and consider the usual question, would I do anything different with my children?

No, because they would be different people and I love them for who they are today.

This is a gift to me on this Mother’s Day.”
