Lincoln Nebraska Bakery | S’more Cake | Wedding Cake and Desserts

S’more Cake, a Lincoln Nebraska Bakery, is featuring a new design for wedding cakes and tasty desserts this spring. This design is a beautiful display that features both a small wedding cake and matching assorted cake desserts on a glass tower. This display would allow guests to enjoy the attractive appearance of the cake table design from all sides and to choose the flavor of their choice. The guests would also have the option to enjoy the dessert later or allow them take it home if they wish. Small boxes can be supplied by S’more Cake with an attached note from the bride and groom as a parting gift, thanking the guests for sharing this special day with them.

This display could be the center focus on a playful candy table,  chocolate fountain feature, or hors d’oeuvres station. Cupcakes are very popular with all age groups and easy to maintain for service staff.

In this display, I have created five different cupcake ribbon and floral designs on the bottom tier, with the petite fours on the second tier topped with a single rose bud of the same pink and light green. I love the combination of these spring colors of the wedding cake. I used flavored fondant over the top of a buttercream base in the overall cake design. This design can also be created with buttercream and royal icing for the bride who would prefer this over the fondant.

Lincoln Nebraska Bakery |S’more Cake | Grandchild’s May Day Party

S’more Cake, Lincoln Nebraska Bakery specializing in wedding cakes, has designed the perfect May Day dessert display to compliment any wedding celebration this month. For May Day, it’s displayed as a small child’s May Day celebration, complete with petite fours and cupcakes. These cake desserts are to be used in the cupcake and wedding cake display that I have designed and will later put into my website.   In this display, I have used three “Adalyn’s Chairs” and the special table designed by Tom Bachtold. The name of this chair, Adalyn, is very special as it is the name of our youngest grandchild. I have added the May Baskets with white flowers on the back of each chair to represent the theme.

It was fun the pick out the colors for this display and the colors of the columbine were perfect. This chair and table is an early birthday gift to our grand daughter, Charlie, who loves pinks and purples. She is the daughter of Alexa and Josh Metcalf and like her mom, is very specific about what she likes.

I am not sure when I became aware of May Day, it seems like I have always known about the little baskets left on the desks or doorsteps of our friends. It’s a delightful practice that I am sure a grade school teacher of mine, told us about in our one room school house years ago. It’s a tradition that I hold very special in my heart.

April Showers Cake to celebrate the spring blossoms.

S’more Cake, a Lincoln Nebraska Bakery, has a uniquely designed spring cake. The inspiration for the theme was the plum tree blossoms that appeared in our back yard with the spring rains.  There is the promise of May flowers to come and planting our gardens. The little rain boots and umbrella were inspired by a photograph my daughter, Alexa, took of grand daughter, Charlie last year.

It is designed on a 10 inch rich, moist yellow cake, frosted with lemon flavored buttercream. The fondant that covers this cake, is also lemon flavored and designed into spring flowers of  pink, periwinkle blue and  yellow. I couldn’t resist putting the little polka dots and bows of on the cute rain boots.

The cake is set on a small table designed by my husband, Tom, and has two small adirondack chairs, also designed by Tom. These chairs are customized to fit our grand children. They are painted in buttercup and are adorable.

April happens to be my favorite month for many reasons. It was the wedding anniversary of my parents and was the month that my littlest sister was born. I have many other friends and family with birthdays this month. When I was planning my wedding, I had to plan it the month of April, using the spring theme and purple pansies as the flowers. So every year I purchase purple pansies for my kitchen to celebrate this wonderful month. Happy Showers!

Lincoln Nebraska Easter Bunny Cakes | S’more Cake | Allie

I traveled to Salt Lake City this last weekend to design the perfect Lincoln Nebraska Easter Bunny Cakes with my grand daughter Allie. We had been very busy all weekend with planned egg hunts, picnics in the park and taking long walks. We enjoyed the beautiful weather while viewing the wonderful mountains. When it came time to start our cake together, Allie was excited, as well as very impatient to begin.

After we worked out the design on paper, we put on our aprons, set up our ingredients, coated the pans and started our work. We made a double batch of cake in a 9 by 12 inch pan for the base, for arms and legs and two 7 inch circular pans for the back. While the carrot cake was baking, we made the head and tail with Rice Krispy bars. The bunny was assembled and covered with my favorite cream cheese frosting includes sour cream, butter and white chocolate. Allie had fun covering the cake with fresh coconut. The face, toes and ears were made with white, pink and black homemade fondant.

We enjoyed our Easter Bunny cake with our delicious Sunday meal.

Lincoln Nebraska Bakery | S’more Cake |Big Red Birthday Cake

This Big Red Birthday Cake from S’more Cake, a Special Event Cake Decorator in Lincoln Nebraska, was designed for Todd’s birthday last Saturday. Stacie asked for a carrot cake as this is his favorite cake and could be decorated either with Big Red or a golfing theme. We decided on the Big Red theme and with graduation time almost here, this has become a popular theme to decorate with. I have the perfect carrot cake recipe that I use from Rose’s Heavenly Cakes by Rose Levy Beranbaum, so it was sure to please.

I cut the layers so there would be more filling in this cake. The filling and frosting is made with cream cheese, sour cream, white chocolate and butter. It makes my mouth water just to talk about it. Yum! I like this particular cake recipe because there is unsweetened cocoa powder in the  ingredients, which always adds to great cakes.

The top of the cake is a red fondant platform for the Big Red cheerleading items that I created out of the lemon flavored fondant. I prefer my homemade fondant over the purchased because it is easier to work with and I can control the amount of dryness I want to work with. I knead the fondant until it is just past the sticky stage and it is perfect. The pompom is designed with a garlic press and turned out very cute. The megaphone and pendant were free hand design with an attached letter N. The fondant items were not attached which made them easy to remove, or could be moved around as an added fun activity.

The fondant will stay pliable with refrigeration for a few hours and is easy to serve.
