Lincoln Nebraska Bakery | S’more Cake |Boy? or Girl?

A Special Event Cake was made by S’more Cake for this Gender Reveal Party! If you have never attended one of these special events, you are missing out on a lot of excitement. As the grand mother, the girls had to invite me, besides I brought the cake! We had waited three weeks to find out if Alexa and Josh was having a boy or girl, so the anticipation was mounting big time! Sister in law, Shanon, was the hostess and received the “secret envelope”.

We started out the party by guessing and adding our advice to the mommy. I decided to guess a boy, however, as the clues kept surfacing during the three weeks, I had changed my mind many times. I had asked Charlie at the party, if mommy was having a “baby boy” or a “baby girl” and she told me a “baby boy”, so that sealed my vote. This was not cheating as she is only three years old and cannot be relied upon. (wink)

Next, Alexa was questioned about the symptoms she is having so far. Based on that “old wive’s tale”, she was expecting a girl. Oh my, was this possible, should I change my vote?

Then we colored “onesies” with well wishes as Shanon read the votes and advice. I thought mine was the most useful as I advised the mommy to rest up before she had her “LITTLE BOY”. Making a plug for my vote, of course.

Then the moment we were waiting for as Charlie came in with her balloons! She is going to be an “awesome” big sister for her new little baby brother! We had our delicious cake, cookies and refreshments!

I had guessed right, but was still very surprised!

Lincoln Nebraska Bakery | S’more Cake | St. Pat’s Cake for Zach and Shanon

S’more Cake, Lincoln Nebraska Bakery created a party fondant cake for Zach and Shanon to celebrate the day with a Special Event Cake for St. Pat’s. This is their first St. Pat’s together as a married couple and we know how important this day has been for Zach. Now, he’s married to an Irish sweetie!

It is in the shape of a leprechaun hat with a large shamrock. The lemon flavored bright green fondant covers a three layer lemon cake frosted with Bailey’s Buttercream. Yum! First, I built the cake up in layers filled with limeade, cream cheese and white chocolate. Then I shaped the cake so that it had a slight slant towards the center, so that the top of the hat is smaller than the base. I measured the height and circumference of the base and top to make parchment paper patterns of the hat design. I rolled out the green fondant for the rim until it was about 3/8 inch thick. I cut the rim out about 2″ wide and wrapped it around the base of the frosted cake. Fondant will stretch, so I was able the shape it as I moved around the cake base. I put egg whites on the two edges and sealed it so it was a continuous rim. I then rolled out fondant about 1/4 inch and cut the sides and top of the hat. Using the egg whites, I again sealed the edges together. The shamrock was made free hand with a lime green fondant with a black band and golden buckle, also sealed to the hat with the egg whites.

I think that a glass of Bailey’s will be the perfect drink with this cake, but I think that Zach will probably have his Guinness!

Weddings are a specialty for S’more Cake, a Lincoln Nebraska Bakery. This week I am featuring a two tiered wedding cake with flavored fondant. The first fondant covers a layer of rich raspberry creamed buttercream frosting. It is a beautiful light warm aqua fondant. There is  three hand made roses in “Early Spring” pink with a matching bow ribbon on top. I have added a  single ribbon of white fondant to frame the top tier. It was fun to design this cake around the ornate floral appliqués of the top tier. The aqua rosette at the center is framed with scrolls that resemble various designs. I repeat the ribbon design in the bottom tier with horizontal lines to tie the design of this cake together.This pleasing design would suit a bride that is very particular with the details of her wedding. It is very detailed, yet very romantic as well for her wedding. The anniversary cake was not included in the design of this cake. It would be safely vacuumed packaged to be stored away ahead of time and saved for the bride and groom at their first anniversary. This anniversary cake would carry over the same design elements. It would be a fond memory as they remember their important day.

When deciding the design of her cake, each bride should keep in mind that the focus of the wedding reception can be featured around the design of the cake.  How it fits into the overall ambiance of her wedding reception. Whether it is set up traditional or contemporary, playful or formal, the cake display table can feature and set the tone for her wedding photography as well as how the reception is successfully handled.

Lincoln Nebraska Bakery | S’more Cake | Gingersnap Spicy Pecan Cake

Celebrations are always a great reason for special event cakes from S’more Cake, a Lincoln Nebraska Bakery. Today I have completed my French Doll project and there is no better way to celebrate then to bake a cake.

It all began with a trip to JoAnn’s fabric store to look at quilt fabric. I discovered a bolt of cotton that had designs and words about Paris. My mind immediately went into action and I had the design idea for a doll. I visited with the assistant at the cutting table who helped me with suggestions for the hair and I was off and running. With my new sewing machine that I purchased at JoAnn’s, a portable Husqvarna Viking 100, I set up sewing area. Loving and enjoying the sun, I moved my sewing project around the house. I designed the pattern and through trial and error, made the body of my doll. As I watched the food channel, I used a seam ripper to separate the strands of thread for her hair, this took quite a while. She’s dressed in a black mini dress, beret, black boots and a wrap with the Paris looking fabric.

I began to plan this week’s specialty cake to celebrate my success. I chose a spicy pecan cake filled with caramelized buttercream with orange zest and added homemade gingersnap cookies. Gingersnaps that are made right are the best and were a favorite cookie with the neighborhood kids as my family grew up. The spicy pecan cake was then frosted with Orange Blossom buttercream and topped with orange peel curls and a gingersnap cookie. It tastes terrific and will be added to my selection of cookies and cream cakes.

After the cake is gone, I will still have the doll,”Ami” to remember my enjoyable day. Bonne journee!

Lincoln Nebraska Bakery | S’more Cake | Three Tiered Cake with Fondant Ribbon

I have enjoyed designing wedding cakes for Lincoln Nebraska Bakery during my time with Niki of Nicolette Dixon Photography in North Salt Lake City. My daughter Niki has a photography business and does fantastic work with her portrait and wedding photography. She did my wedding pictures and I treasure them very much. I am very proud of her talent and appreciated all of her help. She encouraged me as we worked side by side during the four weeks I was there, designing my web site and Facebook business page. She has a “good eye” and I trust her judgement completely. We had a lot of fun exchanging ideas and I had the best time with her.

It was her encouragement several weeks ago and her help that I was able to take a leap of faith in working towards a dream of mine to design wedding cakes in a business venture of my own. The timing was right for me to start this adventure now and she prompted me forward. I will always be very grateful for her advice.

The design of this cake was a lot of fun, with a fondant ribbon on the top and on the first tier. This ribbon was the most challenging element in this design. Getting the fondant at just the right texture and consistency was a challenge, but one that I was able to complete to my satisfaction. The color of the fondant is a beautiful tangerine color and the flavoring is my favorite lemon. The fondant is put on top of a crumb coating of buttercream. The cake is a vanilla cake and filled with raspberry and limeade cream cheese. The cake design is more formal and would be lovely in any wedding venue.
